FOOD MY KIDS WILL EAT - PUMPKIN BREAD

PUMPKIN BREAD
-       recipe from my mother, Dolores Anderson



ingredients (in order):
-       1 & 1/3 cup white sugar
-       ½ cup shortening
-       two eggs
-       1 tsp baking baking soda
-       ½ tsp baking powder
-       ½ tsp cinnamon
-       ¼ tsp cloves
-       1 & 2/3 cup flour
-       ½ cup chopped walnuts
-       1/3 cup water
-       15 oz canned pumpkin
-       (1/2 cup raisins, to taste)


directions:
-       blend sugar with shortening, then add eggs
-       mix in baking powder, baking soda, cinnamon, and cloves
-       mix in flour
-       add pumpkin, water, nuts, +/- raisins
-       pour batter into two 8x3x5 buttered pans
-       bake at 350 for 45 minutes
-       cover with a towel to cool

comments:
-       freezes nicely
-       one option is to make one loaf with raisins and one without (to please both raisin foes and raisin fans)
